Serves: 1 jar
- 1 cup (250ml) water
- 20 magnolia petals
- 1 cup sugar (200g) jam sugar (sugar with pectin added)
- 1 tablespoon lemon juice.
- Place magnolia leaves in a jar and fill with a cup of boiling water.
- Leave for 20 minutes, then strain the leaves out.
- Pour liquid into a pan and add a cup of sugar (about 200g)
- Bring to a gentle boil till all the sugar is dissolved, then increase the heat for about 10 minutes, or until the mixture reaches 105C.
- Add a tablespoon of lemon juice.
- Meanwhile sterilise a clean jar.
- Pour the liquid into the jar and leave to set.
