Magnolia Jam / Magnolia Jelly

Ingredients
  • 1 cup (250ml) water
  • 20 magnolia petals
  • 1 cup sugar (200g) jam sugar (sugar with pectin added)
  • 1 tablespoon lemon juice.
Instructions
  1. Place magnolia leaves in a jar and fill with a cup of boiling water.
  2. Leave for 20 minutes, then strain the leaves out.
  3. Pour liquid into a pan and add a cup of sugar (about 200g)
  4. Bring to a gentle boil till all the sugar is dissolved, then increase the heat for about 10 minutes, or until the mixture reaches 105C.
  5. Add a tablespoon of lemon juice.
  6. Meanwhile sterilise a clean jar.
  7. Pour the liquid into the jar and leave to set.
